WThis is a home-style interpretation of a drink featured on the seasonal cocktail list. This is a large-volume pre-mixed that's bursting with flavours of a holiday season, making it perfect for hosting a festive gathering. Save the extra citrus syrup for morning drinks, sweets, or to mix more rounds of bikinis.
Bikini
Makes enough for 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Drink (yields 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Put all the items in a saucepan, bring to a light boil, stirring until the sugar dissolves. Next, remove from the heat and leave to cool down fully. Decant into a sterilised bottle, cap it and refrigerate it chilled, it can be stored for about one month.
Preparing the Cocktail Base: Mix every spirits and syrup into one big jug, let it rest for an hour, then filter it preferably using muslin, so it's fully clarified.
To serve: Measure 85ml of your cocktail base to a cocktail shaker containing ice, and stir carefully for about 60 seconds to cool it down. Pour into a chilled martini glass or a similar vessel, garnish with some cranberries and complete it with a light spray of the essential oil above the glass.
